– 2 pounds (about 900g) potatoes, peeled and thinly sliced (russet or Yukon Gold potatoes work well)
– 2 tablespoons butter
– 2 tablespoons all-purpose flour
– 2 cups milk (whole milk or half-and-half for creamier results)
– 1 cup shredded cheese (cheddar, Gruyere, or your favorite melting cheese)
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon garlic powder (optional)
– 1/4 teaspoon nutmeg (optional)
– Chopped fresh parsley or chives for garnish (optional)


1. **Preheat Oven:** Preheat your oven to 375°F (190°C). A 9 x 13-inch baking dish should be greased with cooking spray or butter.

2. **Prepare Potatoes:** Peel the potatoes and thinly slice them into rounds, about 1/8-inch thick. You can use a mandoline slicer for even slices if you have one.

3. **Make the Sauce:** In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for 1-2 minutes until the mixture is smooth and bubbly. Gradually whisk in the milk until smooth. Cook for five to seven minutes, stirring continuously, or until the sauce thickens. Take off the heat and slowly whisk in the melted cheese shreds. 4. **Layer Potatoes:** Arrange half of the sliced potatoes in the prepared baking dish, overlapping slightly. Evenly distribute half of the cheese sauce on top of the potatoes. Continue with the leftover sauce and potatoes.

5. **Bake:** Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown and bubbly.

6. **Serve:** Remove from the oven and let it rest for a few minutes before serving. Garnish with chopped parsley or chives if desired. Serve hot as a delicious side dish alongside your favorite main course.
