Cherry salad

Cherry salad is a refreshing and delightful dish that combines the sweetness of cherries with other complementary flavors. Here’s a simple recipe for a classic cherry salad:

Ingredients:

For the Salad:

  • 2 cups fresh cherries, pitted and halved
  • 1 cup mixed greens (lettuce, spinach, or arugula)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped red onion
  • 1/4 cup chopped pecans or walnuts
  • 1/4 cup dried cranberries or raisins

For the Dressing:

  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions:

  • Prepare the Cherries:
    • Wash the cherries thoroughly.
    • Remove the pits by cutting them in half and using a cherry pitter or carefully using a knife.
  • Make the Dressing:
    • In a small bowl, whisk together the extra-virgin olive oil, balsamic vinegar, honey, salt, and pepper. Taste and adjust the seasoning if needed. Set aside.
  • Assemble the Salad:
    • In a large salad bowl, combine the mixed greens, pitted and halved cherries, chopped red onion, crumbled feta cheese, chopped pecans or walnuts, and dried cranberries or raisins.
  • Dress the Salad:
    • Drizzle the prepared dressing over the salad. Start with a small amount and add more as desired. Toss the salad gently to coat the ingredients evenly with the dressing.
  • Serve:
    • Transfer the cherry salad to serving plates or a platter.
    • Optionally, you can garnish with additional cheese, nuts, or fresh herbs for extra flavor and presentation.

Enjoy!

Serve the cherry salad immediately as a refreshing appetizer or side dish. It pairs well with grilled chicken, roasted meats, or as a standalone light meal.
