Jalapeno Popper Chicken Casserole

Ingredients:

For the Casserole 

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 8 ounces cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese
  • 4-6 jalapeno peppers, seeded and diced (adjust to your desired level of spiciness)
  • 1 cup crushed Ritz crackers or bread crumbs
  • 1/4 cup unsalted butter, melted
  • Fresh cilantro or parsley for garnish (optional)

Instructions:

  • Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish with cooking spray.
  • Prepare the Chicken:
    • Season the chicken breasts with salt and pepper.
    • Heat a skillet over medium-high heat with a bit of oil. Cook the chicken for about 4-5 minutes on each side or until they are cooked through and no longer pink in the center. Remove from heat and let them rest for a few minutes, then shred or chop the cooked chicken into bite-sized pieces. Set aside.
  • Prepare the Jalapeno Popper Mixture:
    • In a large mixing bowl, combine the softened cream cheese, mayonnaise, sour cream, shredded cheddar cheese, shredded Monterey Jack cheese, grated Parmesan cheese, and diced jalapeno peppers. Mix well until all the ingredients are fully combined.

  • Assemble the Casserole:
    • Place the cooked chicken pieces in the prepared baking dish in an even layer.
    • Pour the jalapeno popper mixture over the chicken, spreading it out evenly.
  • Prepare the Topping:
    • In a small bowl, mix the crushed Ritz crackers or bread crumbs with the melted butter until well combined.
  • Add the Topping:
    • Sprinkle the crumb mixture evenly over the top of the casserole.
  • Bake:
    • Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the top is golden brown and the casserole is hot and bubbly.
  • Serve:
    • Remove the casserole from the oven and let it cool for a few minutes before serving.
    • Optionally, garnish with fresh cilantro or parsley for a pop of color and flavor.
