Ingredients:

For the Lemon Cake Layers:

  • 1 box of lemon cake mix (plus ingredients listed on the box such as eggs, oil, and water)

For the Blueberry Cheesecake Filling:

  • 3 (8 oz) packages of cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

For the Lemon Cream Cheese Frosting:

  • 2 (8 oz) package of cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • Zest of 1 lemon
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract

Instructions:

1. Preheat your oven to the temperature specified on the cake mix box. Grease and flour three 9-inch round cake pans.

2. Prepare the lemon cake mix according to the instructions on the box. Divide the batter evenly among the three prepared cake pans. Bake according to package instructions. Once baked, remove from the oven and let the cake layers cool completely.

3. While the cake layers are cooling, prepare the blueberry cheesecake filling. In a mixing bowl, beat the cream cheese and sugar until smooth. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract. Gently fold in the blueberries.

4. Spread the blueberry cheesecake filling evenly over the top of one of the cooled cake layers. Place another cake layer on top and repeat the process until all layers are stacked with blueberry cheesecake filling in between. Refrigerate the cake while you prepare the frosting.

5. To make the lemon cream cheese frosting, beat the cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar, lemon zest, lemon juice, and vanilla extract, beating until smooth and well combined.

6. Frost the assembled cake with the lemon cream cheese frosting, covering the top and sides evenly.

7. Optional: Garnish the cake with additional fresh blueberries and lemon zest for decoration.

8. Refrigerate the cake for at least 2 hours before serving to allow the flavors to meld together and the cheesecake filling to set.

9. Serve slices of the Lemon Blueberry Cheesecake Cake and enjoy!

This cake is perfect for special occasions or whenever you’re craving a delightful combination of citrusy lemon, sweet blueberries, and creamy cheesecake.

Enjoy!
