Peach Cobbler Pound Cake

Peach Cobbler Pound Cake is a delicious dessert that combines the flavors of a classic peach cobbler with a moist and flavorful pound cake. Below is a recipe to help you prepare this delightful treat:

Ingredients:

For the cake:

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sour cream

For the peach cobbler layer:

  • 4 cups fresh peaches, peeled and sliced (about 4-5 peaches)
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 teaspoons cornstarch

For the streusel topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, chilled and cut into small pieces

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a bundt cake pan or a 9×13-inch baking dish.
  2. Prepare the peach cobbler layer: In a medium-sized bowl, mix together the sliced peaches, granulated sugar, cinnamon, nutmeg, and cornstarch until the peaches are well coated. Set aside.
  3. Prepare the streusel topping: In a small bowl, combine the flour and granulated sugar. Add the chilled butter pieces and work them into the dry ingredients using your fingers or a pastry cutter until the mixture resembles coarse crumbs. Set aside.
  4. For the cake: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  5. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  6. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  7. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, starting and ending with the dry ingredients. Mix until just combined. Do not overmix.

  1. Spread half of the cake batter evenly into the prepared baking pan.
  2. Layer the peach cobbler mixture on top of the cake batter.
  3. Carefully spoon the remaining cake batter over the peach layer, spreading it as evenly as possible.
  4. Sprinkle the streusel topping over the top of the cake.
  5. Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  6. Once baked, remove the cake from the oven and allow it to cool in the pan for about 15-20 minutes.
  7. After cooling slightly, you can either serve the cake directly from the baking dish or invert it onto a serving platter.
  8. Optionally, you can serve the Peach Cobbler Pound Cake with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat.

Enjoy your Peach Cobbler Pound Cake! It’s a perfect dessert to celebrate the peach season or to enjoy any time you crave a delightful and comforting treat.
