Forgotten Chicken

 

Ingredients:

  • 4-6 bone-in, skin-on chicken thighs (you can also use drumsticks or a combination)
  • 1 cup long-grain white rice
  • 1 can (10.75 oz) cream of mushroom soup
  • 1 can (10.75 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 275°F (135°C).
  2. In a mixing bowl, combine the cream of mushroom soup, cream of chicken soup, chicken broth, minced garlic, dried thyme, and dried rosemary. Stir until well combined.
  3. Spread the uncooked rice evenly on the bottom of a large baking dish.
  4. Place the chicken thighs on top of the rice, arranging them in a single layer. Season the chicken with salt and pepper to taste.
  5. Scatter the thinly sliced onions over the chicken.

  1. Pour the soup mixture over the chicken, making sure to cover all pieces evenly.
  2. Cover the baking dish tightly with aluminum foil.
  3. Place the dish in the preheated oven and bake for about 3-4 hours, or until the chicken is tender and the rice has absorbed the liquid, and the top is golden brown.
  4. Once done, remove the foil from the baking dish and let it rest for a few minutes before serving.
  5. Garnish with chopped fresh parsley if desired, and serve hot.
