  • 2 to 3 ripe bananas, mashed

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar

  • Preheat your oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch (23×33 cm) baking pan or two 9-inch (23 cm) round cake pans if you prefer a layered cake.
  • Prepare the bananas: In a small bowl, mash the ripe bananas and stir in the lemon juice. Set aside.
  • Combine dry ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • Cream together the butter and sugars: In a large mixing bowl, beat the softened butter, vegetable oil, granulated sugar, and brown sugar until the mixture is light and fluffy.

  • Prepare the cream cheese frosting: In a separate mixing bowl, beat together the softened cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract, and continue to beat until the frosting is creamy and well combined.
