Zesty Italian Macaroni
I made this on one of those nights where I wanted something warm, cheesy and filling but I didn’t want to stand in the kitchen juggling a dozen steps. I opened the pantry and found a box of macaroni, a jar of pasta sauce, a packet of zesty Italian seasoning, and some shredded cheese. No frills. Nothing rough. Just simple ingredients that are usually there waiting for a plan. So I decided to make them into dinner.
I boiled the macaroni first, just until it was tender. I didn’t overcook it because I knew the oven would finish it. As it drained, I was mixing the sauce with the Italian seasoning and watching it turn instantly into something more flavorful. Then I combined all in a baking dish. Start with the pasta, then the sauce, and finish with a healthy dollop of cheese on top. I didn’t stress about it being perfect. I just made sure it coated well and looked ready for the oven.
Once it baked, it was something else. The cheese melted into a golden layer on top, the sauce thickened around the pasta, and the seasoning filled the kitchen with a strong, herby aroma that made everyone wonder what dinner was.
It looked plain but comforting when I took it out of the oven, the kind of food you could put on a plate and no one would ask any questions about. I served it hot, right from the pan. People were going back for seconds before I even sat down. That’s how I know a recipe belongs in my rotation.
