Sausage and Peppers
I made this on a day when I wanted something simple, but still wanted a real meal. I didn’t want a long prep list or a sink full of dishes. I only wanted self-cooking food and I did all the rest. So I looked at what I had, sausage, bell peppers and onions. That’s all. Nothing fancy, nothing complicated, just the basic ingredients that usually end up in different meals.
I diced the sausage, peppers and onions. Then I just threw everything into the slow cooker. No other steps. Just don’t overthink it. I put the lid on and let it cook. A few hours later the smell filled the kitchen. The sausage started to give off its smoky flavor while the peppers and onions softened into a sweet, savory sauce that coated everything in the pot.
When I lifted the lid everything looked simple yet flavorful. The sausage was juicy and the vegetables soaked up all the seasoning from the meat. I served it hot, right out of the slow cooker. People were going back for seconds before I had finished my plate. That’s pretty much how I know it’s time to make it again.”
