April Showers Tuna

April Showers Tuna

April Showers Tuna

I made this on a rainy afternoon, when the weather kept me inside and I didn’t feel like having to deal with anything complicated in the kitchen. I opened the pantry and found a couple of cans of tuna, a can of cream soup, some pasta and a small bag of peas. On their own they weren’t exciting but I knew a slow cooker could turn them into something warm and satisfying.

So I took the plunge. I cooked the pasta first, just to the al dente stage. I didn’t let it go too long because I still wanted some bite after it finished in the slow cooker. I mixed the cream soup with a little seasoning while it drained and got everything else ready.

Then I threw it all in the slow cooker. Then the tuna, then the pasta, then the peas, then the creamy soup mixture. I stirred it until everything was coated evenly and looked like a real meal and not just random pantry items. I closed the lid and left it alone. A couple of hours later the kitchen smelled warmly and simply comforting. The sauce thickened slightly, the tuna melted into the creamy base and the peas burst little pockets of sweetness throughout the dish.

When I lifted the lid, everything looked soft, creamy and ready to be served. I dished it out in bowls, and served it hot. At first people said little, just ate. Then they returned for more. That usually tells me enough.” Now I make this recipe whenever I want something easy, cozy and low effort, especially on days when I want dinner to take care of itself.
