Biscuit Beef Casserole

Biscuit Beef Casserole

This was made on a night I didn’t want anything complicated but I needed to get a real dinner on the table. I looked in the fridge and found ground beef that needed to be used. The pantry provided me with a can of biscuits and a can of cream soup. I also had shredded cheese ready to work sitting there.

And that was enough. I didn’t plan anything beyond that point. I just started cooking and I trusted that it would work out. I took the pan and browned the beef in it. Even if I don’t know the end result yet, the smell always makes me feel like dinner is officially underway. When the beef was cooked through, I stirred in the cream soup and watched it thicken into a creamy consistency.

By then it was smelling like something good to eat. I snapped the biscuits into pieces and put them on a baking dish. I didn’t even try to make it neat or perfect. I just wanted it to work out. I spooned the beef mixture over the biscuits and spread it with a spoon.

Then I put cheese on top. Then the oven did its thing. While baking, the biscuits rose up through the beef mixture and soaked up all that creamy flavor. The edges got a little brown, and the smell filled the kitchen in that way that makes people wander in slowly asking what’s for dinner.

I took it out and the top was brown and crisp and the inside was soft and rich. The biscuits kept it all together, like a crust without trying. I ate it right out of the pan. At first, no one said much. They had just fed. Then they came back for more, unasked.

That usually tells me all I want to know. Now I make this when I’m looking for something filling but not requiring a lot of effort that still feels like a complete meal.
