Easy Burrito Casserole

Burrito casserole is a delicious and convenient dish that combines the flavors of burritos with the ease of a casserole. Here’s a simple recipe for making burrito casserole:

Ingredients:

  • 2pound ground beef (you can also use ground turkey or chicken)

  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 packet (1.25 ounces) of taco seasoning mix
  • 2 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 2 can (10 ounces) diced tomatoes with green chilies, drained
  • 1 cup salsa
  • 2 cups shredded Mexican cheese blend
  • 6 large flour tortillas
  • Optional toppings: diced tomatoes, sliced jalapenos, sour cream, avocado, cilantro, etc.

Instructions:

  • Preheat the oven: Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish with cooking spray or oil.
  • Cook the ground beef: In a large skillet, cook the ground beef over medium heat until it’s browned and no longer pink, breaking it apart with a spoon as it cooks. Drain any excess fat.
  • Add vegetables and seasoning: Add diced onion and bell pepper to the skillet with the cooked ground beef. Cook for another 3-4 minutes until the vegetables are softened. Stir in the taco seasoning mix and cook for another minute.
  • Combine with beans, corn, and tomatoes: Add the drained black beans, corn, and diced tomatoes with green chilies to the skillet with the beef and vegetables. Stir well to combine everything and cook for another 2-3 minutes until heated through.
  • Assemble the casserole: Spread a thin layer of salsa on the bottom of the prepared baking dish. Place two tortillas on top of the salsa, overlapping if necessary to cover the bottom of the dish. Spoon half of the beef and vegetable mixture over the tortillas, then sprinkle with half of the shredded cheese. Repeat with another layer of tortillas, beef mixture, and cheese.

  • Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for another 10-15 minutes until the cheese is melted and bubbly and the casserole is heated through.
  • Serve: Remove the casserole from the oven and let it cool for a few minutes before slicing and serving. Serve with optional toppings such as diced tomatoes, sliced jalapenos, sour cream, avocado, or cilantro.
