CREAMY SLOW COOKER CHEESEBURGER SOUP

Here’s a simple recipe for Creamy Slow Cooker Cheeseburger Soup:

 Ingredients:

– 1 lb ground beef
– 1 onion, diced
– 3 cloves garlic, minced
– 4 cups beef broth
– 3 cups diced potatoes
– 2 carrots, peeled and diced
– 1 can (14.5 oz) diced tomatoes
– 1 teaspoon dried basil
– 1 teaspoon dried oregano
– 1 teaspoon paprika
– Salt and pepper to taste
– 1 cup milk
– 1/4 cup all-purpose flour
– 2 cups shredded cheddar cheese
– 1/2 cup heavy cream
– Optional toppings: chopped green onions, crispy bacon bits, extra shredded cheese

 Instructions:

1. In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess grease.
2. Add the diced onion and minced garlic to the skillet with the cooked beef. Sauté for a few minutes until the onions are softened.
3. Transfer the cooked beef mixture to the slow cooker.
4. Add the beef broth, diced potatoes, diced carrots, diced tomatoes (with their juices), dried basil, dried oregano, paprika, salt, and pepper to the slow cooker. Stir to combine.
5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the vegetables are tender.
6. In a small bowl, whisk together the milk and flour until smooth. Stir the milk mixture into the slow cooker.
7. Add the shredded cheddar cheese and heavy cream to the slow cooker. Stir until the cheese is melted and the soup is creamy.
8. Taste and adjust seasoning if needed.
