Lazy Pecan Pie Bars

Lazy Pecan Pie Bars are a delicious and easy-to-make treat that captures the flavor of traditional pecan pie but in bar form. Here’s a simple recipe for you:

Ingredients:

  • 1 package (16.5 oz) refrigerated sugar cookie dough
  • 1 cup chopped pecans
  • 1/2 cup packed brown sugar
  • 1/2 cup corn syrup (light or dark)
  • 2 large eggs
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish or line it with parchment paper for easy removal.

  1. Prepare the Crust: Take the sugar cookie dough and press it evenly into the bottom of the prepared baking dish to form the crust. Make sure it’s tightly packed and covers the bottom completely.
  2. Prepare the Filling: In a mixing bowl, combine the chopped pecans, brown sugar, corn syrup, melted butter, vanilla extract, eggs, and a pinch of salt. Mix until everything is well combined.
  3. Pour Over Crust: Once the filling is mixed, pour it evenly over the sugar cookie dough crust in the baking dish.
  4. Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the filling is set and the edges are golden brown.
  5. Cool and Slice: Remove the baking dish from the oven and let it cool completely on a wire rack. Once cooled, slice the pecan pie bars into squares or rectangles.
  6. Serve: Serve the Lazy Pecan Pie Bars at room temperature. Optionally, you can top them with whipped cream or a scoop of vanilla ice cream for an extra indulgence.

  1. Storage: Store any leftovers in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.

Enjoy your delicious Lazy Pecan Pie Bars!
