Slow Cooker Chicken Alfredo Rigatoni

This Slow Cooker Chicken Alfredo Rigatoni is one of those meals that’s both indulgent and comforting, but still so easy to put together. The chicken cooks low and slow until tender, soaking up the rich Alfredo sauce, and then the rigatoni is stirred in to absorb every bit of cheesy goodness. It’s a dish that tastes like it came from your favorite Italian restaurant, but all you have to do is lift the lid on your slow cooker. Perfect for family dinners or when you just want something cozy without all the effort.

Ingredients

  • 2 lbs boneless, skinless chicken breasts (or thighs)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp Italian seasoning

  • Salt & black pepper, to taste

  • 2 cups Alfredo sauce (store-bought or homemade)

  • 1 cup chicken broth

  • 1 cup heavy cream

  • 1 cup shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • 16 oz rigatoni pasta, uncooked

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place chicken in the slow cooker and season with garlic powder, onion powder, Italian seasoning, salt, and pepper.

  2. Pour in Alfredo sauce, chicken broth, and heavy cream. Stir gently to coat.

  3. Cover and cook on LOW 4–5 hours or HIGH 2–3 hours, until chicken is tender.

  4. Remove chicken, shred with two forks, then return it to the sauce.

  5. Stir in uncooked rigatoni, mozzarella, and Parmesan. Mix well.

  6. Cover and cook on HIGH for 30–40 minutes, stirring occasionally, until pasta is tender.

  7. Garnish with parsley and extra Parmesan before serving.

📝 Notes

  • For a richer flavor, use homemade Alfredo sauce instead of store-bought.

  • If you like extra cheese, sprinkle more mozzarella or Parmesan just before serving.

  • Swap rigatoni for penne, ziti, or even shells if that’s what you have on hand.

  • Add steamed broccoli, spinach, or peas at the end for a veggie boost.

  • Leftovers reheat well—just add a splash of milk or cream to keep it creamy.
