I had no intention of making dessert that evening. The kitchen was full of dishes from dinner, and I wanted to sit down, not start another cooking project. But later I still wanted something sweet – warm, a little messy, not too serious, really.

I opened the pantry and found saltine crackers. Nothing interesting about them. A sleeve. Sitting. Waiting for a purpose. And beside me were chocolate chips and a jar of caramel sauce I bought for something else and never used.

That combination gave me pause. I didn’t give it much thought. I just took out the slow cooker and started layering.

When I made this initially, I was convinced it would fail. I don’t think saltines belong in dessert and I wasn’t sure how they would hold up with melted chocolate and caramel soaking into them. But a few minutes into it the kitchen started smelling different.

First the chocolate melted and that rich sweet smell filled the room, the smell that always draws people in. Then came the caramel, warm and buttery, coating everything. The crackers got soft enough to hold the layers together, but not so soft that they melted away. That threw me.

What You Need

  • 1 sleeve of saltine crackers
  • 1 cup of butter
  • 1 cup brown sugar, light
  • 2 cups of chocolate chips
  • 1 cup caramel sauce
  • 1 tsp vanilla extract
  • Salt, pinch of

Directions
Step 1: Melt the base

  • Place butter and brown sugar in a slow cooker.
  • On LOW, stir until the butter is melted and sugar is incorporated as it heats.
  • Cook for about 15-20 minutes until smooth.

Step 2: Form the first layer

  • Line the bottom of slow cooker with saltine crackers.
  • If necessary, split them to fit the space.
  • Spoon some of the warm caramel mixture on the crackers and spread evenly.

Step 3: Add chocolate and more layers

  • Sprinkle half of the chocolate chips on top.
  • Put down another layer of saltines.
  • Pour more of the caramel mixture over that layer.
  • Top with the rest of the chocolate chips.

Step 4: Prepare

  • Cover and cook on LOW 1 to 1-1/2 hours.
  • Everything should be soft and gooey, the chocolate melted away.
  • Step 5: Complete and serve
  • Spoon more caramel sauce on top.
  • Add a tiny pinch of salt.
  • Allow to sit for 10-15 minutes to set up a little.
  • Serve warm with a scoop.

Kitchen Notes Little

  • Layering will crack saltines a little bit. It’s okay.
  • If you like, add some chopped nuts for crunch.
  • The sea salt on top brings out the chocolate flavor.
  • Add ice cream for a more substantial dessert.
