Some dinners just bring everything together—flavor, comfort, and a touch of nostalgia. This cheesy sausage and pepper casserole does exactly that. It takes the classic combo of Italian sausage with colorful bell peppers and bakes it all under a blanket of golden, bubbling cheese. The best part? It’s low-carb, so you can enjoy that rich, hearty goodness without the heaviness of pasta or bread. Whether you’re looking for a weeknight family favorite or a meal-prep staple, this casserole delivers all the comfort of an Italian-inspired dish in a lighter, guilt-free way.
Ingredients
1 lb Italian sausage (mild or spicy)
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 small onion, sliced
2 cloves garlic, minced
1 tsp Italian seasoning
½ tsp crushed red pepper flakes (optional)
1 cup marinara sauce (sugar-free if low-carb)
2 cups shredded mozzarella cheese
½ cup grated Parmesan cheese
Olive oil, for sautéing
Fresh parsley, for garnish
Instructions
Preheat oven to 375°F (190°C).
In a skillet, cook sausage until browned, breaking it into crumbles. Remove and set aside.
In the same skillet, sauté peppers, onion, and garlic in a drizzle of olive oil until tender. Stir in Italian seasoning and red pepper flakes.
Combine sausage, veggies, and marinara in a casserole dish. Mix well.
Top with cheeses and bake uncovered for 20 minutes, or until bubbly and golden.
Garnish with parsley and serve hot.
Note: You can easily switch up this casserole by using chicken sausage, spicy chorizo, or even turkey sausage for a lighter option. If you like extra heat, add jalapeños or a sprinkle of chili flakes before baking. It’s also great for meal prep—just portion into containers and reheat for quick, low-carb lunches or dinners.
