Ingredients

  • 1 lb Italian sausage (mild or spicy)

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 small onion, sliced

  • 2 cloves garlic, minced

  • 1 tsp Italian seasoning

  • ½ tsp crushed red pepper flakes (optional)

  • 1 cup marinara sauce (sugar-free if low-carb)

  • 2 cups shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • Olive oil, for sautéing

  • Fresh parsley, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a skillet, cook sausage until browned, breaking it into crumbles. Remove and set aside.

  3. In the same skillet, sauté peppers, onion, and garlic in a drizzle of olive oil until tender. Stir in Italian seasoning and red pepper flakes.

  4. Combine sausage, veggies, and marinara in a casserole dish. Mix well.

  5. Top with cheeses and bake uncovered for 20 minutes, or until bubbly and golden.
