There’s nothing quite like a warm bowl of chowder to bring comfort to the table. This slow cooker version combines tender potatoes, sweet corn, and smoky bacon in a creamy broth that practically cooks itself. Perfect for chilly evenings or when you want a hearty, family-friendly meal without hovering over the stove. A sprinkle of crispy bacon on top makes each spoonful irresistible!
Ingredients
5 slices bacon, chopped
4 cups potatoes, diced
1 medium onion, diced
3 cups corn (fresh, frozen, or canned & drained)
3 cups chicken broth
2 cups milk (or half-and-half for creamier texture)
2 cloves garlic, minced
1 tsp dried thyme
1 tsp salt
½ tsp black pepper
2 tbsp flour (optional, for thickening)
2 tbsp butter (optional, for richness)
Chopped green onions or parsley, for garnish
Instructions
Cook bacon in a skillet until crisp. Drain on paper towels, reserving a little of the grease.
Sauté onion and garlic in the bacon drippings for 2–3 minutes until fragrant.
Add to slow cooker: potatoes, corn, onion mixture, broth, thyme, salt, and pepper. Stir.
Cook on LOW 6–7 hours or HIGH 3–4 hours, until potatoes are tender.
Finish: Stir in milk (or half-and-half). For a thicker chowder, whisk flour into melted butter, then stir into chowder. Cook an additional 20–30 minutes.
Serve hot, topped with crispy bacon and fresh herbs.
