Slow Cooker Potato Corn Chowder with Bacon

There’s nothing quite like a warm bowl of chowder to bring comfort to the table. This slow cooker version combines tender potatoes, sweet corn, and smoky bacon in a creamy broth that practically cooks itself. Perfect for chilly evenings or when you want a hearty, family-friendly meal without hovering over the stove. A sprinkle of crispy bacon on top makes each spoonful irresistible!

Ingredients

  • 5 slices bacon, chopped

  • 4 cups potatoes, diced

  • 1 medium onion, diced

  • 3 cups corn (fresh, frozen, or canned & drained)

  • 3 cups chicken broth

  • 2 cups milk (or half-and-half for creamier texture)

  • 2 cloves garlic, minced

  • 1 tsp dried thyme

  • 1 tsp salt

  • ½ tsp black pepper

  • 2 tbsp flour (optional, for thickening)

  • 2 tbsp butter (optional, for richness)

  • Chopped green onions or parsley, for garnish

Instructions

  1. Cook bacon in a skillet until crisp. Drain on paper towels, reserving a little of the grease.

  2. Sauté onion and garlic in the bacon drippings for 2–3 minutes until fragrant.

  3. Add to slow cooker: potatoes, corn, onion mixture, broth, thyme, salt, and pepper. Stir.

  4. Cook on LOW 6–7 hours or HIGH 3–4 hours, until potatoes are tender.

  5. Finish: Stir in milk (or half-and-half). For a thicker chowder, whisk flour into melted butter, then stir into chowder. Cook an additional 20–30 minutes.

  6. Serve hot, topped with crispy bacon and fresh herbs.

Note: You can partially blend the chowder with an immersion blender for a creamier texture while still keeping some chunks of potato and corn.
