By the time we got home, the house would be filled with the savory aroma of tender beef and peppers simmering in a rich, tangy sauce.

This dish is a perfect blend of ease and flavor—no need to stand over the stove. Just let your slow cooker do the work while you go about your day. 📝 Ingredients

  • 2 lbs beef sirloin or round steak, sliced into thin strips

  • 2 tablespoons vegetable oil

  • 1 large onion, sliced

  • 1 green bell pepper, sliced

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced (optional)

  • 1 can (14.5 oz) diced tomatoes, undrained

  • 3 tablespoons soy sauce

  • 2 tablespoons brown sugar

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon garlic powder

  • ½ teaspoon ground ginger (optional)

  • ½ cup beef broth

  • 2 tablespoons cornstarch + 2 tablespoons cold water (for thickening)

  • Salt & pepper, to taste

  • Cooked rice or noodles, for serving

👩‍🍳 Instructions

  1. Brown the Beef (Optional):
    In a large skillet, heat oil over medium-high heat. Sear the beef strips just until browned (this step adds flavor but can be skipped for convenience).

  2. Layer in the Slow Cooker:
    Add beef, sliced onions, and bell peppers to the slow cooker.

  3. Make the Sauce:
    In a bowl, whisk together diced tomatoes, soy sauce, brown sugar, Worcestershire sauce, garlic powder, ginger, and beef broth. Pour over the beef and vegetables.

  4. Cook:
    Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until beef is tender and peppers are soft.

  5. Thicken the Sauce:
    About 30 minutes before serving, stir together cornstarch and cold water. Pour into the slow cooker and stir. Let cook uncovered until sauce thickens.

  6. Serve:
    Spoon over fluffy white rice or noodles and enjoy!
