– 2 cups mashed potatoes (leftover or freshly made)
– 2 large eggs
– 1 cup shredded cheddar cheese
– 1/4 cup grated Parmesan cheese
– 1/4 cup sour cream
– 1/4 cup milk
– 1/4 cup chopped green onions or chives
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– Salt and pepper to taste
– 1/2 teaspoon baking powder
– 1/2 cup all-purpose flour
– Optional: cooked bacon bits, diced ham, or other mix-ins

1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.

2. Mix Wet Ingredients: In a large bowl, combine the mashed potatoes, eggs, cheddar cheese, Parmesan cheese, sour cream, milk, green onions or chives, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are thoroughly combined.

3. Add Dry Ingredients: Add the baking powder and flour to the potato mixture. Stir until just combined. Be careful not to overmix.

4. Add Mix-ins: If using additional mix-ins like bacon bits or diced ham, fold them into the batter.

5. Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.

6. Bake: Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

7. Cool and Serve: Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
