Ingredients:
– 2 cups mashed potatoes (leftover or freshly made)
– 2 large eggs
– 1 cup shredded cheddar cheese
– 1/4 cup grated Parmesan cheese
– 1/4 cup sour cream
– 1/4 cup milk
– 1/4 cup chopped green onions or chives
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– Salt and pepper to taste
– 1/2 teaspoon baking powder
– 1/2 cup all-purpose flour
– Optional: cooked bacon bits, diced ham, or other mix-ins

Instructions:

1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.

2. Mix Wet Ingredients: In a large bowl, combine the mashed potatoes, eggs, cheddar cheese, Parmesan cheese, sour cream, milk, green onions or chives, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are thoroughly combined.
