Ingredients:

  • 1/2 cup white rice

  • 4 cups whole milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (plus more for garnish, if desired)
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup raisins (optional)
  • 2 tablespoons butter

Instructions:

  1. Rinse the Rice: Start by rinsing the rice under cold water to remove excess starch.

  1. Cook the Rice: In a medium-sized saucepan, combine the rinsed rice and 2 cups of water. Bring it to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and most of the water is absorbed.

  3. Combine Ingredients: In a separate mixing bowl, combine the cooked rice, whole milk, sugar, salt, vanilla extract, ground cinnamon, ground nutmeg, and raisins (if using). Stir well to combine.
  4. Bake: Pour the mixture into a greased baking dish. Dot the top with butter.
  5. Bake in the Oven: Place the baking dish in the preheated oven and bake for 2 to 2.5 hours or until the pudding has set and the top is golden brown. You may want to stir the pudding a couple of times during baking to ensure even cooking.
