Ingredients:
1 lb ground beef (or a mix of beef & pork)
1/2 cup breadcrumbs
1/4 cup milk
1 egg
1/4 cup finely chopped onion
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp Italian seasoning (optional)
1 cup shredded cheddar or mozzarella cheese (or cheese cubes)
Ketchup or BBQ sauce (for topping)
Instructions:
Preheat oven to 375°F (190°C). Lightly grease a mini muffin pan or baking sheet.
Mix the meat mixture:
In a large bowl, combine ground meat, breadcrumbs, milk, egg, onion, garlic powder, salt, pepper, and Italian seasoning. Mix just until combined—don’t overmix.Form and stuff:
Take a tablespoon of the meat mixture and flatten it in your hand. Place a cube or pinch of shredded cheese in the center, then wrap the meat around it and roll into a ball.
Bake:
Place each meatball in a mini muffin tin or on a lined baking sheet. Top each with a small dollop of ketchup or BBQ sauce.Bake for 18–22 minutes, or until cooked through and nicely browned on top.
Serve warm, with extra dipping sauce if desired!
Note:
You can swap the cheddar for mozzarella, pepper jack, or your favorite cheese. To save time, use pre-cut cheese cubes or even string cheese chunks! These bites freeze well too—just reheat in the oven or air fryer for a quick snack.
