Tater Tot Sausage Breakfast Casserole is a delicious and hearty dish that’s perfect for breakfast or brunch


  • 1 pound breakfast sausage (pork or turkey)
  • 1 medium onion, finely chopped
  • 1 red bell pepper, diced
  • 2 cups shredded cheddar cheese
  • 1 32-ounce bag frozen tater tots
  • 12 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Cooking spray


  • Preheat the Oven: Preheat your oven to 350°F (175°C).
  • Cook Sausage: In a large skillet, cook the breakfast sausage over medium heat, breaking it apart with a spoon as it cooks. Once browned, add the chopped onion and diced red bell pepper. Cook until the vegetables are softened. Drain any excess grease.
  • Prepare Baking Dish: Spray a 9×13-inch baking dish with cooking spray. Spread the cooked sausage mixture evenly across the bottom of the dish.
