  • 2 cups broccoli florets, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper (adjust to taste)
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Optional toppings: extra shredded cheddar cheese, chopped green onions, cooked bacon bits

Instructions:

  1. Prepare the Ingredients:
    • Peel and dice the potatoes into bite-sized pieces.
    • Chop the broccoli florets into smaller pieces.
    • Chop the onion and mince the garlic.
  2. Cook the Vegetables:
    • Place the diced potatoes, chopped broccoli, chopped onion, and minced garlic in the crock pot.
    • Add the dried thyme, rosemary, oregano, salt, and black pepper.
  3. Add Broth:
    • Pour the chicken or vegetable broth over the vegetables in the crock pot. Make sure the broth covers the vegetables.
  4. Cook on Low:
    • Cover the crock pot and cook on low heat for about 6-8 hours or until the potatoes are tender.
  5. Make the Cheese Sauce:
    • In a saucepan, melt the butter over medium heat.
    • Stir in the flour to create a roux. Cook for about 1-2 minutes, stirring constantly.
    • Gradually whisk in the heavy cream, and continue to whisk until the mixture thickens and becomes smooth.

  1. Add Cheese:
    • Reduce the heat to low and gradually stir in the shredded cheddar cheese. Continue to stir until the cheese is fully melted and the sauce is smooth.
  2. Combine Cheese Sauce and Soup:
    • Once the potatoes are tender in the crock pot, gently mash some of the potatoes to thicken the soup. You can use a potato masher or the back of a spoon.
    • Pour the cheese sauce into the crock pot with the potato and broccoli mixture. Stir well to combine.
  3. Final Touch:
    • Cover the crock pot again and let the soup cook for an additional 15-20 minutes on low heat, allowing the flavors to meld.
  4. Serve:
    • Ladle the potato broccoli cheddar soup into bowls.
    • If desired, top with extra shredded cheddar cheese, chopped green onions, and cooked bacon bits.
  5. Enjoy!
