I’ll never forget that chaotic weeknight when I first made this Parmesan chicken. Between work, errands, and trying to keep the house in some sort of order, I knew I didn’t have the energy—or the time—to slave over the stove. I wanted something comforting, something that felt like a hug on a plate, but also something I could throw together in minutes.

I dug through my pantry and fridge and realized I didn’t have to overcomplicate things. With just four simple ingredients—chicken, cream of chicken soup, Parmesan cheese, and a little garlic powder—I could make something extraordinary. I tossed everything into the slow cooker, set it, and went on with my evening, not expecting much.

A few hours later, the smell hit me first. Rich, cheesy, garlicky aroma filled the house, making my stomach growl before I even laid eyes on it. I lifted the lid, and there it was: perfectly tender chicken, coated in a creamy, cheesy sauce that looked like it had taken hours to make. Ingredients (4 only!)

  • 4 boneless, skinless chicken breasts

  • 1 cup grated Parmesan cheese

  • 1 can (10.5 oz) cream of chicken soup

  • 1 teaspoon garlic powder

Instructions

  1. Place chicken breasts in the bottom of your slow cooker.

  2. In a bowl, mix the cream of chicken soup, Parmesan cheese, and garlic powder.

  3. Pour the mixture over the chicken, making sure each piece is coated.

  4. Cover and cook on low for 4–5 hours or high for 2–3 hours, until chicken is cooked through and tender.

  5. Optional: Sprinkle a little extra Parmesan on top before serving for an extra cheesy finish.

Notes & Tips

  • This chicken pairs perfectly with pasta, rice, or steamed veggies.

  • For a crispy topping, you can broil the chicken for 2–3 minutes after slow cooking.
