What makes this soup special is its simplicity: potatoes, onions, carrots, and celery slowly simmered until tender, then finished with a creamy base that gives it that old-fashioned Amish farmhouse flavor. Ingredients:

  • 6 medium potatoes, peeled and diced

  • 1 cup carrots, chopped

  • 1 cup celery, chopped

  • 1 medium onion, chopped

  • 4 cups chicken or vegetable broth

  • 1 tsp salt (or to taste)

  • ½ tsp black pepper

  • 1 tsp garlic powder

  • 1 cup cooked ham or bacon bits (optional, but very Amish-style!)

  • 3 tbsp butter

  • 3 tbsp flour

  • 3 cups milk

  • 1 cup shredded cheddar cheese

Instructions:

  1. In your slow cooker, add potatoes, carrots, celery, onion, broth, salt, pepper, and garlic powder.

  2. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the vegetables are tender.

  3. About 30 minutes before serving, melt butter in a saucepan. Stir in flour to make a roux, cooking for 1–2 minutes. Slowly whisk in milk until thickened.

  4. Stir this creamy mixture into the slow cooker along with the ham or bacon (if using).

  5. Add cheddar cheese and stir until melted and smooth.

  6. Serve hot with bread or crackers.

Note: If you prefer a thicker soup, mash a few of the cooked potatoes before adding the cream base.
