It was a chilly weekend afternoon, and we had friends coming over for a casual game night. I didn’t want to spend hours in the kitchen, but I also didn’t want to serve plain old chips and dip. I opened the fridge, spotted a package of kielbasa, and had a lightbulb moment.

Instead of slicing it like usual, I gave each round a few quick “hasselback” cuts—just enough to catch a glaze. Then I whipped up a simple mix of smoky BBQ sauce, a splash of maple syrup for sweetness, and a bit of mustard for tang. As the bites baked in the oven, the glaze caramelized beautifully in the slits, turning each piece into a sticky, golden, flavor-packed treat.

When I pulled them out and served them hot with toothpicks, they disappeared in minutes. Now, they’re a go-to anytime I need a quick appetizer that feels special without the fuss.

  • 1 lb smoked kielbasa sausage

  • 1/3 cup BBQ sauce (smoky or hickory style)

  • 2 tbsp pure maple syrup

  • 1 tbsp Dijon mustard

  • Optional: chopped green onions or parsley for garnish

🔪 Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil or parchment.

  2. Slice the kielbasa into 1-inch thick rounds. Then make 3-4 shallow “hasselback” slits on top of each piece—don’t cut all the way through.

  3. Mix glaze: In a bowl, stir together BBQ sauce, maple syrup, and Dijon mustard.

  4. Brush the glaze generously over each kielbasa bite, getting into the slits.

  5. Bake for 18–20 minutes, basting once halfway through, until caramelized and sizzling.

  6. Serve hot, garnished with green onions or parsley if desired. Add toothpicks for easy grabbing!

Note:

For extra flavor, you can prepare the glaze ahead of time and marinate the sliced kielbasa bites for 30 minutes before baking. Want a spicy kick? Add a pinch of cayenne pepper or a dash of hot sauce to the glaze. These bites are best served warm, but they reheat well in the oven or air fryer if needed.
