This recipe came about on a night when dinner needed to be quick, but I didn’t want to sacrifice flavor. I had some chicken cutlets, a bit of Parmesan, and a handful of shredded mozzarella—nothing fancy, but just enough to turn into something comforting.

The first time I made these Baked Garlic Parmesan Chicken Cutlets, the smell alone had everyone hovering around the oven. The garlic mingling with melted cheese and that crispy golden topping? Ingredients:

  • 2 large boneless, skinless chicken breasts (sliced in half to make 4 thin cutlets)

  • 2 cloves garlic, minced

  • ½ cup mayonnaise (or plain Greek yogurt for a lighter version)

  • ½ cup grated Parmesan cheese

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp paprika

  • Salt & black pepper to taste

  • 1 cup shredded mozzarella cheese

  • Fresh parsley (optional, for garnish)

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Prepare the mixture: In a small bowl, combine mayonnaise, minced garlic, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix well.

  3. Arrange chicken: Place chicken cutlets on the prepared baking sheet. Spread the garlic-Parmesan mixture evenly over the top of each cutlet.

  4. Bake: Bake for 18–22 minutes, or until the chicken is fully cooked (internal temp of 165°F / 74°C).

  5. Add cheese: Remove the tray, sprinkle mozzarella on top of each cutlet, then return to the oven and broil for 2–3 minutes until the cheese is melted and slightly golden.

  6. Garnish & serve: Sprinkle with chopped parsley if desired. Serve with a side of pasta, salad, or roasted veggies.
