Ingredients:

  • 2 pork tenderloins (about 2–2.5 lbs total)

  • 1/2 cup maple syrup (real maple syrup preferred)

  • 1/4 cup Dijon mustard

  • 2 tbsp soy sauce (or low sodium)

  • 2 cloves garlic, minced

  • 1 tbsp apple cider vinegar (optional, for a slight tang)

  • Salt & pepper to taste

  • Fresh thyme or rosemary (optional)

Instructions:

  1. Season the Pork:

    • Sprinkle pork tenderloins with salt and pepper.

    • Place them in the slow cooker.

  2. Make the Sauce:

    • In a small bowl, whisk together maple syrup, Dijon mustard, soy sauce, garlic, and vinegar (if using).

    • Pour mixture over the pork.

  3. Slow Cook:

    • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the pork is tender and cooked through (internal temp: 145°F/63°C).

  4. Optional – Thicken the Sauce:

    • Remove pork and cover to keep warm.

    • Pour juices into a saucepan. Simmer and reduce slightly, or stir in a cornstarch slurry (1 tbsp cornstarch + 1 tbsp water) to thicken.
