Seven Layer Taco Salad

This is one I made one night when everyone in the house wanted something different. One wanted taco’s. Another wanted something “lighter”. I just wanted dinner on the table fast without the need to juggle a bunch of separate dishes. So I pulled open the fridge and began layering whatever taco ingredients I had.

No plan. A big bowl and just hunger. I browned the ground beef first because that always sets the tone for anything taco related. The smell from the kitchen was immediate, and then the rest of the meal made sense. I added in taco seasoning and let it cook while I grabbed everything else. Then I started to stack.

First the beans, refried. I scattered them across the bottom of the bowl, and didn’t bother to smooth it out. Then came chopped lettuce. It looked like a lot at first but it always settles when everything stacks up.

Then I added the warm beef. That’s where it all starts to fall into place. The heat of the meat softens the layers underneath just enough to meld the flavors without making it all mush. Then the cheese, tomatoes, salsa, and a big dollop of sour cream on top. At the end, I crushed tortilla chips because someone in the house always wants crunch. When I was done I stepped back to look at it. It wasn’t perfect or polished, but it looked like dinner. And that is often good enough.

The people took the spoons and began to eat from the bowl. There were no plates waiting. Nobody asked for any extras. It simply worked. That’s the thing about this recipe, it doesn’t ask much of you but it always disappears quickly.

Ingredients

Directions
Step 1 – Prepare the beef

  • Let it simmer for a few minutes to allow the flavour to seep in.

Step 2: Prepare the base

  • Put the refried beans in a large serving bowl.
  • Top with chopped lettuce.

Step 3: Add the warm layer

  • Spoon the cooked beef onto the lettuce.
  • Spread it all over to cover the layer below.

Step 4: Add the toppings

  • Sprinkle the shredded cheese over the beef.
  • Add salsa and diced tomatoes.
  • Top with dollop of sour cream.

Step 5: Finish and plate

  • Top with crushed tortilla chips just before serving.
  • Serve hot.

Mini Kitchen Notes

  • Just before serving, toss to keep lettuce crisp.
  • Add jalapenos if you want more heat.
  • If you have black olives they work nicely.
  • Ground turkey is a lighter alternative.
