5-Ingredient Slow Cooker Foil-Wrapped Potato Bombs

Some recipes are born out of pure comfort—and these potato bombs are exactly that. I first made these on a busy day when the slow cooker was already out, the house felt chilly, and everyone wanted something warm, filling, and a little indulgent. Wrapping potatoes in foil feels old-fashioned, almost like campfire cooking, but letting the slow cooker do the work turns them into something magical. When you open the foil, the steam rolls out, the butter melts into every crack, and the cheese and bacon come together in one perfect bite. These are the kind of potatoes people sneak seconds of before dinner even hits the table.

Ingredients (5 total)

  • 4 large russet potatoes

  • 4 tablespoons butter, sliced

  • 1 cup shredded cheddar cheese

  • ½ cup cooked bacon bits

  • Salt & black pepper, to taste

Instructions

  1. Scrub potatoes clean and pat dry.

  2. Place each potato on a large sheet of foil.

  3. Slice the potato halfway through in a crisscross pattern (don’t cut all the way down).

  4. Season with salt and pepper, then tuck butter slices into the cuts.

  5. Wrap each potato tightly in foil.

  6. Place foil-wrapped potatoes in the slow cooker.

  7. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until tender.

  8. Carefully unwrap, sprinkle with cheddar cheese and bacon bits.

  9. Re-cover loosely and cook 10–15 minutes more until cheese melts.

Serving Ideas

  • Serve as a hearty side dish for chicken, steak, or pork

  • Add sour cream or green onions if you want extra toppings

  • Perfect for potlucks, game day, or hands-off family dinners

Note

For crispier edges, unwrap the potatoes at the end and place them under the broiler for 3–5 minutes before serving. These also reheat beautifully wrapped back in foil.
