A few years ago, I took a short trip to a little coastal town where every meal felt like a celebration—simple ingredients, bright flavors, and dishes that made you feel nourished from the inside out. One night, a small family-run café served a chicken-and-vegetable bake so comforting and vibrant that I knew I had to recreate it at home.
This Mediterranean Chicken Zucchini Bake is my way of bringing those sun-kissed flavors into a weeknight-friendly dish. It’s colorful, wholesome, and packed with tender chicken, fresh veggies, and a hint of creamy feta that melts into every bite. Everything cooks together in one pan, making it perfect for busy nights when you want something healthy but still completely satisfying.
Whether you’re feeding your family or meal-prepping for the week, this dish brings that Mediterranean “gather around and enjoy” feeling straight to your home—no plane ticket required.
Ingredients
3 boneless, skinless chicken breasts, cut into bite-sized pieces
2 medium zucchinis, sliced into rounds
1 pint cherry tomatoes, halved
1 red bell pepper, diced
1/2 red onion, thinly sliced
3 garlic cloves, minced
1/4 cup olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried thyme
Salt and pepper, to taste
1/2 cup crumbled feta cheese
Fresh parsley, chopped (optional)
Instructions
Preheat Oven:
Preheat your oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.Prepare the Chicken & Veggies:
Add the chicken pieces, zucchini slices, cherry tomatoes, bell pepper, red onion, and garlic to the baking dish.Season Everything:
Drizzle with olive oil and sprinkle in the oregano, basil, thyme, salt, and pepper. Toss everything together until well coated and evenly distributed.Bake:
Spread into an even layer and bake for 25–30 minutes, or until the chicken is fully cooked and the vegetables are tender.Add the Feta:
Remove from the oven and sprinkle crumbled feta over the top. Return to the oven for 5 more minutes to warm and slightly melt the feta.Serve:
Finish with fresh parsley if desired, and serve warm.
Notes
Add olives for extra Mediterranean flavor.
Serve over rice, couscous, quinoa, or with crusty bread.
Swap chicken for shrimp or chickpeas for a lighter or vegetarian version.
