Slow Cooker Irish Bacon Cabbage and Potato Soup

There’s something deeply comforting about this Irish-inspired soup — smoky bacon, tender cabbage, and creamy potatoes all slow-cooked into a rich, hearty bowl of goodness. It tastes like a hug on a cold day and fills your kitchen with the best cozy aroma!

🕐 Ingredients

  • 6 slices thick-cut bacon, chopped

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 4 cups potatoes, peeled and diced

  • 3 cups green cabbage, chopped

  • 4 cups chicken or vegetable broth

  • 1 cup water

  • 1 tsp salt (adjust to taste)

  • ½ tsp black pepper

  • 1 tsp dried thyme

  • ½ cup heavy cream (optional, for a creamy finish)

  • Chopped parsley, for garnish

👩‍🍳 Instructions

  1. In a skillet, cook bacon until crispy. Drain on paper towels and set aside.

  2. In the same pan, sauté onion and garlic in a bit of the bacon fat for 2–3 minutes.

  3. Add onions, garlic, bacon, potatoes, cabbage, broth, water, salt, pepper, and thyme to your slow cooker.

  4. Cover and cook on Low for 6–7 hours or High for 3–4 hours, until potatoes and cabbage are tender.

  5. Stir in heavy cream before serving if you’d like a creamy texture.

  6. Garnish with parsley and enjoy warm!

💚 Note:
This soup is even better the next day — the flavors deepen beautifully. Serve with crusty bread or soda bread for a true Irish touch.
