Slow Cooker Creamy Scalloped Potatoes

There’s something magical about the scent of creamy, cheesy potatoes slow-cooking in the kitchen. I still remember my grandmother preparing scalloped potatoes every Sunday — not in a slow cooker, but layered in a heavy glass dish, bubbling away in the oven while we set the table. She always said, “Good potatoes take their time.” That memory inspired me to recreate her classic comfort dish with a modern twist — using the slow cooker to do all the heavy lifting.

This Slow Cooker Creamy Scalloped Potatoes recipe brings that same rich, buttery flavor and tender texture, but with less effort and no need to heat up the whole house. It’s perfect for holidays, potlucks, or any night you want a hearty, no-fuss side that warms both your stomach and your heart.

Ingredients

  • 6 medium russet potatoes, peeled and thinly sliced

  • 1 small onion, thinly sliced

  • 2 cups shredded cheddar cheese

  • 1 cup heavy cream

  • 1 cup milk

  • 3 tablespoons butter, melted

  • 2 tablespoons all-purpose flour

  • 1 teaspoon garlic powder

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • Optional: fresh thyme or parsley for garnish

Instructions

  1. Prep the Sauce:
    In a bowl, whisk together heavy cream, milk, melted butter, flour, garlic powder, salt, and pepper until smooth.

  2. Layer the Potatoes:
    Spray your slow cooker with nonstick spray. Layer half of the sliced potatoes in the bottom, followed by half of the sliced onions and half the cheese. Pour half of the cream mixture over the top.

  3. Repeat the Layers:
    Add the remaining potatoes, onions, cheese, and cream mixture.

  4. Cook:
    Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the potatoes are tender.

  5. Finish and Serve:
    Let the dish sit for 10 minutes before serving. Garnish with fresh herbs if desired.

Note:
For best results, slice the potatoes as evenly and thinly as possible — about 1/8 inch thick. A mandoline slicer works great for this and ensures even cooking. If you’d like a crispier top layer, you can transfer the finished dish to an oven-safe pan, sprinkle with extra cheese, and broil for 3–5 minutes before serving.
