Slow Cooker Beef Bolognese with Penne

This Slow Cooker Beef Bolognese with Penne is one of those easy, soul-warming meals that brings everyone to the table. Inspired by cozy Sunday dinners and hearty Italian flavors, this dish is a no-fuss way to enjoy a classic meat sauce — all with the convenience of a slow cooker. Just toss everything in, let it simmer low and slow, and serve over perfectly cooked penne for a dinner that tastes like it took hours (because it did — but without you lifting a finger).

Ingredients:

  • 1 lb ground beef

  • 1 small onion, finely chopped

  • 3 cloves garlic, minced

  • 1 (28 oz) can crushed tomatoes

  • 1 (15 oz) can tomato sauce

  • 2 tbsp tomato paste

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/2 tsp crushed red pepper flakes (optional)

  • 1/2 cup milk (adds richness)

  • 1 tbsp olive oil

  • 12 oz penne pasta, cooked and drained

  • Fresh parsley or basil, for garnish

  • Grated Parmesan, for serving

Instructions:

  1. Brown the beef:
    In a skillet over medium heat, add olive oil and cook ground beef until browned. Add chopped onion and garlic and sauté for 3-4 minutes until soft.

  2. Transfer to slow cooker:
    Add the cooked beef mixture to the slow cooker. Stir in crushed tomatoes, tomato sauce, tomato paste, basil, oregano, salt, pepper, red pepper flakes (if using), and milk.

  3. Cook low and slow:
    Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, stirring occasionally if possible.

  4. Serve:
    Cook penne pasta according to package directions. Serve Bolognese sauce over penne and top with fresh herbs and grated Parmesan.

Tips:

  • Want extra depth? Add a splash of red wine before cooking.

  • Make it creamy: Stir in a bit of heavy cream or ricotta at the end.
