Slow Cooker Hearty Beef and Vegetable Spaghetti

There’s just something special about coming home to a slow cooker meal — especially one that reminds you of cozy family dinners. I remember the first time I made this hearty beef and vegetable spaghetti, it was one of those days when life felt a little too busy. I wanted something filling, something that would warm the heart without making a mess in the kitchen. So, I grabbed what I had on hand — some ground beef, a few veggies, and spaghetti — tossed it all in the slow cooker, and let it work its magic. Hours later, the house smelled amazing, the sauce was rich and savory, the vegetables perfectly tender, and the spaghetti absorbed all that goodness. It quickly became a family favorite — simple, satisfying, and comforting every single time.

📝 Ingredients:

  • 1 lb ground beef

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 1 zucchini, diced

  • 1 carrot, diced

  • 1 bell pepper, diced

  • 2 cups marinara or spaghetti sauce

  • 1 can (14.5 oz) diced tomatoes

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 8 oz uncooked spaghetti (broken in half)

  • 2 cups beef broth or water

  • Optional: grated Parmesan, fresh parsley for garnish

🍽️ Instructions:

  1. Brown the Beef: In a skillet over medium heat, cook the ground beef with onion and garlic until browned. Drain excess grease.

  2. Load the Slow Cooker: Add the cooked beef, zucchini, carrot, bell pepper, marinara sauce, diced tomatoes, Italian seasoning, salt, and pepper into your slow cooker. Stir well.

  3. Cook the Base: Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours until the vegetables are soft and flavors blend beautifully.

  4. Add the Spaghetti: About 30-40 minutes before serving, stir in the broken uncooked spaghetti and beef broth (or water). Stir well to coat the pasta.

  5. Finish Cooking: Cover again and cook on HIGH for 30-40 minutes, stirring once or twice, until spaghetti is tender and sauce is thickened.

  6. Serve: Plate up your hearty spaghetti, garnish with Parmesan and parsley if you like, and enjoy!

  • You can swap in your favorite vegetables like mushrooms, spinach, or peas.
