1 lb ground turkey
1 small onion, diced
3 bell peppers (any color), chopped
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes (with juice)
1 can (15 oz) tomato sauce
3 cups low-sodium chicken broth
1 tsp Italian seasoning
1/2 tsp paprika
Salt & pepper to taste
3/4 cup uncooked white or brown rice
Optional: chopped parsley or shredded cheese for garnish

Brown the Turkey
In a skillet over medium heat, cook the ground turkey and diced onion until browned. Drain excess fat if needed.Add to Slow Cooker
Transfer the turkey and onion mixture to your slow cooker.Add Remaining Ingredients (except rice)
Stir in bell peppers, garlic, diced tomatoes, tomato sauce, chicken broth, Italian seasoning, paprika, salt, and pepper.Cook
Cover and cook on low for 6–8 hours or high for 3–4 hours.
Add Rice
About 30 minutes before serving, stir in uncooked rice.
Cover and continue cooking until rice is tender.
Serve
