If you’re a fan of cheesecake and caramel, these Caramel Cheesecake Bars are about to become your new favorite treat! With a buttery graham cracker crust, a rich, creamy cheesecake layer, and swirls of sweet caramel throughout, every bite is pure indulgence. They’re easy to make, perfect for sharing, and guaranteed to impress at any gathering!
Ingredients:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
2 (8 oz) packages cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup caramel sauce (plus extra for drizzling)
1/4 tsp sea salt (optional, for sprinkling)
Instructions:
Preheat oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper, leaving a little overhang for easy removal.
Make the crust: In a bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press firmly into the bottom of the prepared pan.
Bake the crust for 8–10 minutes. Let it cool slightly.
Prepare the filling: Beat the cream cheese and 1/2 cup sugar together until smooth and creamy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
Pour half of the cheesecake batter over the crust. Drizzle a few tablespoons of caramel sauce over the batter. Use a toothpick to swirl it slightly.
Add remaining batter on top. Drizzle more caramel sauce and swirl again.
Bake for 30–35 minutes, or until the center is just set.
Cool completely, then refrigerate for at least 2 hours before slicing.
Drizzle extra caramel over the top before serving and sprinkle a little sea salt if desired.
Note:
For cleaner slices, chill the bars thoroughly and use a sharp knife wiped clean between each cut. If you prefer a deeper caramel flavor, you can use salted caramel sauce instead of regular caramel, and sprinkle a little extra sea salt on top for a sweet-and-salty twist!
