Crockpot Beef and Broccoli

Here’s a simple and delicious recipe for making Crockpot Beef and Broccoli! This slow-cooker version delivers tender beef with a rich, flavorful sauce.

Ingredients

  • 1 ½ lbs flank steak or beef chuck, sliced thinly
  • 1 cup beef broth

  • ½ cup low-sodium soy sauce
  • ¼ cup brown sugar
  • 2 tablespoons sesame oil
  • 4 garlic cloves, minced
  • 1 tablespoon fresh minced ginger (optional for extra flavor)
  • 3 tablespoons cornstarch
  • 3 tablespoons water
  • 3 cups fresh broccoli florets
  • Optional: sesame seeds and chopped green onions for garnish

Instructions

  1. Prepare the Beef and Sauce: Place the sliced beef in the crockpot. In a bowl, combine beef broth, soy sauce, brown sugar, sesame oil, garlic, and ginger, then pour this mixture over the beef.

  1. Slow Cook: Cover and cook on low for 4-5 hours or on high for 2-3 hours until the beef is tender.
  2. Thicken the Sauce: Mix cornstarch and water in a small bowl to create a slurry. Once the beef is cooked, add the slurry to the crockpot and stir to thicken the sauce.
  3. Add Broccoli: Place broccoli florets in the crockpot, cover, and cook on high for another 20-30 minutes until the broccoli is tender yet crisp.
  4. Serve and Enjoy: Serve over steamed rice, garnished with sesame seeds and green onions if desired.
