Cowboy Cookies are a delicious, hearty treat that combines the best of oats, chocolate, and nuts (with a little coconut if you’re feeling adventurous). These cookies have a perfect balance of crunch and chew, making them a great snack for road trips, lunchboxes, or just when you’re craving something sweet. Whether you’re baking for a crowd or just a cozy night in, these cookies are sure to satisfy!

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 cups old-fashioned oats
  • 1 ½ cups semi-sweet chocolate chips
  • 1 cup chopped pecans (optional)
  • 1 cup shredded coconut (optional)

Instructions:

  • Adjust the oven temperature to 350°F (175°C) and place parchment paper on a baking pan.
  • Cream butter and sugars together in a large bowl until fluffy. Beat in the eggs and vanilla.
  • Mix the flour, baking powder, baking soda, and salt in a another basin.
  • Gradually add the dry ingredients to the wet ingredients and mix until combined.
  • Add the chocolate chips, pecans, coconut, and oats, if using.
  • Drop dough onto the prepared baking sheet by spoonfuls.
  • Bake until the edges turn brown, 10 to 12 minutes. Before moving to a wire rack, allow the baked goods cool on the baking sheet for a few minutes.
