Ingredients
For the Filling:
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 medium onion, finely chopped
- 2-3 garlic cloves, minced
- 1-2 jalapenos, seeds removed for a milder taste, finely diced

- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (or a mix of cheddar and Monterey Jack)
- 1/4 cup fresh cilantro, chopped (optional)
For the Crust:
- 2 pie crusts (store-bought or homemade)
- 1 beaten egg (for egg wash)
Instructions
Make the Filling:
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and cook until it turns translucent, about 3-4 minutes.
- Add minced garlic and chopped jalapenos, cooking for another 1-2 minutes until fragrant.
- Add ground beef, cooking until browned and breaking it apart with a spoon. Drain any excess fat.
- Stir in tomato paste, chili powder, cumin, smoked paprika, salt, and pepper. Cook for 2-3 more minutes to combine the flavors.
- Remove from heat and let it cool slightly. Mix in the shredded cheese and cilantro, if using.
Assemble the Pie:
- Preheat the oven to 375°F (190°C).
- Roll out one pie crust and press it into a 9-inch pie dish.
- Spread the beef filling evenly over the crust.
- Roll out the second pie crust and place it on top of the filling. Trim the excess dough and crimp the edges to seal.
- Cut a few small slits in the top crust to let steam escape.
Bake the Pie:
- Brush the top crust with beaten egg for a shiny, golden appearance.
- Bake in the oven for 30-35 minutes or until the crust is golden and the filling is hot.
Serve:
- Let the pie rest for about 10 minutes before cutting into slices.
