Spicy Jalapeno and Cheese Beef Pie

Ingredients

For the Filling:

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 2-3 garlic cloves, minced
  • 1-2 jalapenos, seeds removed for a milder taste, finely diced
  • 1 tablespoon tomato paste
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika

  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (or a mix of cheddar and Monterey Jack)
  • 1/4 cup fresh cilantro, chopped (optional)

For the Crust:

  • 2 pie crusts (store-bought or homemade)
  • 1 beaten egg (for egg wash)

Instructions

Make the Filling:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and cook until it turns translucent, about 3-4 minutes.
  3. Add minced garlic and chopped jalapenos, cooking for another 1-2 minutes until fragrant.

  1. Add ground beef, cooking until browned and breaking it apart with a spoon. Drain any excess fat.
  2. Stir in tomato paste, chili powder, cumin, smoked paprika, salt, and pepper. Cook for 2-3 more minutes to combine the flavors.
  3. Remove from heat and let it cool slightly. Mix in the shredded cheese and cilantro, if using.

Assemble the Pie:

  1. Preheat the oven to 375°F (190°C).
  2. Roll out one pie crust and press it into a 9-inch pie dish.
  3. Spread the beef filling evenly over the crust.
  4. Roll out the second pie crust and place it on top of the filling. Trim the excess dough and crimp the edges to seal.
  5. Cut a few small slits in the top crust to let steam escape.

Bake the Pie:

  1. Brush the top crust with beaten egg for a shiny, golden appearance.
  2. Bake in the oven for 30-35 minutes or until the crust is golden and the filling is hot.

Serve:

  1. Let the pie rest for about 10 minutes before cutting into slices.
  2. Serve with a side of salad, a dollop of sour cream, or extra jalapenos for more heat.
