Pineapple Casserole Recipe
Ingredients:
- 1/3 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 can (20 oz) pineapple tidbits, drained (see notes)
- 1 can (20 oz) crushed pineapple, drained (see notes)
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded white cheddar cheese
- 1/4 cup unsalted butter, melted
- 35-45 Ritz crackers, crushed (or other buttery crackers)
Instructions:
- Preheat & Prepare:
- Set your oven to 350°F (175°C).
- Grease a 9-inch square or 1 1/2-quart baking dish.
- Assemble the Casserole:
- In a large bowl, mix together the flour and sugar.
- Stir in the drained pineapple tidbits, crushed pineapple, sharp cheddar, and white cheddar until well combined.
- Evenly spread the mixture into the prepared baking dish.
- Prepare the Topping:
- In a separate bowl, mix the melted butter with the crushed Ritz crackers.
- Bake:
- Sprinkle the cracker mixture over the pineapple mixture in the dish.
- Bake for 35-40 minutes, until the top is golden brown and the casserole is heated through.
- Serve:
- Serve warm for the best taste.
Notes:
- This casserole can be enjoyed as a side dish or dessert.
- Greasing the dish makes cleanup easier.
- Thoroughly drain the pineapple, and save the juice for another use.
- For the best flavor, use canned pineapple packed in its own juice.
- Store leftovers in the refrigerator for up to four days. Reheat in the microwave or in a 350°F oven, covered with foil, for 10-15 minutes.
