Pineapple Casserole Recipe

Ingredients:

  • 1/3 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 can (20 oz) pineapple tidbits, drained (see notes)
  • 1 can (20 oz) crushed pineapple, drained (see notes)
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded white cheddar cheese
  • 1/4 cup unsalted butter, melted
  • 35-45 Ritz crackers, crushed (or other buttery crackers)

Instructions:

  1. Preheat & Prepare:
    • Set your oven to 350°F (175°C).
    • Grease a 9-inch square or 1 1/2-quart baking dish.
  2. Assemble the Casserole:
    • In a large bowl, mix together the flour and sugar.
    • Stir in the drained pineapple tidbits, crushed pineapple, sharp cheddar, and white cheddar until well combined.
    • Evenly spread the mixture into the prepared baking dish.
  3. Prepare the Topping:
    • In a separate bowl, mix the melted butter with the crushed Ritz crackers.
  4. Bake:
    • Sprinkle the cracker mixture over the pineapple mixture in the dish.
    • Bake for 35-40 minutes, until the top is golden brown and the casserole is heated through.

    • Serve warm for the best taste.

Notes:

  • This casserole can be enjoyed as a side dish or dessert.
  • Greasing the dish makes cleanup easier.
  • Thoroughly drain the pineapple, and save the juice for another use.
  • For the best flavor, use canned pineapple packed in its own juice.
  • Store leftovers in the refrigerator for up to four days. Reheat in the microwave or in a 350°F oven, covered with foil, for 10-15 minutes.
