Ingredients:
- 1 medium head of cabbage, finely chopped
- 10 green tomatoes, chopped
- 4 large onions, chopped
- 2 green bell peppers, chopped
- 2 red bell peppers, chopped
- 2 cups white vinegar
- 2 cups apple cider vinegar
- 6 cups granulated sugar
- 1/4 cup salt
- 1 tbsp mustard seeds
- 1 tbsp celery seeds
- 2 tsp turmeric
- 2 tsp ground ginger
- 1 tsp ground cloves
- 1 tsp red pepper flakes (optional)
Instructions
Prep Vegetables: Combine cabbage, tomatoes, onions, and peppers. Sprinkle with salt and let sit overnight.
Rinse & Drain: Rinse vegetables thoroughly and drain.
Cook: In a pot, combine vinegars, sugar, and spices. Bring to boil, add vegetables, and simmer for 45 minutes.
Can: Sterilize jars. Pack hot chow chow into jars, leaving 1/4 inch headspace. Process for ten minutes in a bath of hot water.
Store: Let jars cool. Check seals after 24 hours. For up to a year, keep sealed jars in a cold, dark area.
