Ingredients:

  • 1 lb (450 g) lean ground beef (90% lean or higher)
  • 1/2 cup whole wheat bread crumbs

  • 1/2 cup finely chopped bell pepper (any color)
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/4 cup skim milk
  • 1/4 cup low-sodium ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Topping:

  • 1/4 cup low-sodium ketchup
  • 1 tbsp brown sugar (optional for a slight sweetness)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Meatloaf Mixture:
    • In a large bowl, combine the ground beef, bread crumbs, onion, bell pepper, and garlic.
    • In a small bowl, whisk together the egg, skim milk, 1/4 cup of ketchup, Worcestershire sauce, oregano, basil, parsley, salt, and pepper.
    • Pour the wet mixture into the meat mixture and mix until just combined. Be careful not to overmix, as this can make the meatloaf tough.

    • Transfer the meat mixture to a loaf pan (approximately 9×5 inches) and shape it into a loaf. Alternatively, you can shape the loaf freeform on a baking sheet lined with parchment paper.
  2. Prepare the Topping:
    • In a small bowl, mix together the 1/4 cup of ketchup and the brown sugar (if using).
    • Spread this mixture evenly over the top of the meatloaf.
  3. Bake the Meatloaf:
    • Place the meatloaf in the preheated oven and bake for 45-55 minutes, or until the internal temperature reaches 160°F (71°C).
    • If the topping starts to brown too much, cover the meatloaf with aluminum foil.
