– Two pounds of skinless, boneless chicken thighs or breasts- 1 medium onion, finely chopped
– 3 cloves garlic, minced

– 1 tsp dried thyme
– 1 tsp dried rosemary
– 1 tsp dried parsley
– 1 bay leaf

– 8 oz egg noodles

– 1 cup heavy cream (optional)
– Fresh parsley, chopped (for garnish)

Instructions:

1. Prepare the Crockpot:

  • Place the chicken breasts or thighs in the bottom of the crockpot.

  •  Pour in the chicken broth and water.

  • Cook, covered, for 6–7 hours on low or 3–4 hours on high, or until the chicken is cooked through and tender.

4. Shred the Chicken:

  • After cooking, take the chicken out of the crockpot and shred it with two forks.
