  •  1 cup buttermilk
  •  2 large eggs
  •  1/4 cup honey
  •  1/4 cup melted butter

Instructions:

1. Preheat Oven:

  • Preheat your oven to 375°F (190°C).

2. Prepare the Filling:

  • Brown the ground meat in a large skillet over medium-high heat. Eliminate any excess fat.
  •  Add the minced garlic, green bell pepper, and diced onion. Cook for about 5 minutes, or until the vegetables are tender.
  •  Stir in the kidney beans, corn, diced tomatoes (with juice), tomato sauce, and taco seasoning. Bring the mixture to a simmer and let it cook for 10 minutes to blend the flavors.
  •  Transfer the filling mixture to a greased 9×13-inch baking dish. Sprinkle the shredded cheddar cheese evenly over the top.

3. Prepare the Cornbread Topping:

  • Mix the cornmeal, flour, baking soda, baking powder, and salt in a big bowl.
  •  In a separate bowl, mix the buttermilk, eggs, honey, and melted butter.
  •  Combine the wet and dry ingredients, stirring only until they are well blended. Take cautious not to blend too much.

4. Assemble the Casserole:

  • Spoon the cornbread batter evenly over the filling in the baking dish, spreading it out to the edges.

5. Bake:

  • Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cornbread topping is golden brown and cooked through.

6. Serve:

  • Prior to serving, allow the casserole to cool for a few minutes. Enjoy your Cowboy Cornbread Casserole with a dollop of sour cream or a sprinkle of fresh cilantro if desired.
