Here’s a simple recipe for making a classic macaroni salad:


  • 2 cups uncooked elbow macaroni
  • 3 hard-boiled eggs, chopped

  • 1 cup mayonnaise
  • 2 tablespoons vinegar (white or apple cider vinegar work well)
  • 1 tablespoon yellow mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced celery
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced red onion
  • Optional: chopped fresh parsley for garnish


  1. Cook the Macaroni: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain the cooked macaroni and rinse under cold water to stop the cooking process. Drain well and transfer to a large mixing bowl.
  2. Prepare Dressing: In a small bowl, mix together the mayonnaise, vinegar, mustard, sugar, salt, and black pepper until well combined. Adjust seasoning to taste if necessary.
  3. Combine Ingredients: Add the chopped hard-boiled eggs, diced celery, diced red bell pepper, and diced red onion to the bowl with the cooked macaroni.
  4. Add Dressing: Pour the prepared dressing over the macaroni and other ingredients in the bowl. Gently toss until everything is evenly coated with the dressing.
