Here’s a simple recipe for Parmesan Garlic Roasted Potatoes:



  • 1 ½ pounds (about 680g) potatoes (such as Yukon Gold or Russet), washed and cut into cubes or wedges
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup grated Parmesan cheese
  • Fresh parsley, chopped (optional, for garnish)


  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potato cubes or wedges with olive oil, minced garlic, dried thyme, dried rosemary, salt, and black pepper until the potatoes are evenly coated.
  3. Spread the seasoned potatoes out in a single layer on a baking sheet lined with parchment paper or aluminum foil.
