- 1 can (10 ounces/283g) Rotel diced tomatoes and green chilies, undrained
- 1 cup shredded cheddar cheese (or your choice of cheese)
- 8-10 taco shells or tortillas
- Toppings of your choice (lettuce, tomato, sour cream, salsa, guacamole, etc.)
Instructions:
- Cook the Ground Beef: In a large skillet over medium-high heat, cook the ground beef and chopped onion until the meat is browned and the onion is soft and translucent. Break up the meat into small crumbles as it cooks.
- Season the Meat: Drain any excess fat from the skillet. Add the taco seasoning mix (or your homemade seasoning blend) to the cooked meat and onions. Follow the instructions on the taco seasoning packet if you’re using it. If not, use about 2-3 tablespoons of your homemade seasoning mix. Stir well to coat the meat evenly.
- Add Rotel Tomatoes: Pour the can of Rotel diced tomatoes and green chilies (with their liquid) into the skillet with the seasoned meat. Stir to combine. Allow the mixture to simmer for about 5-7 minutes, or until it thickens slightly and most of the liquid has evaporated.
- Warm the Taco Shells: While the meat mixture is simmering, warm your taco shells or tortillas in the oven according to the package instructions. You can also heat them in a microwave for a few seconds.
